You-Gotta-Be-Kidding-Me Black Bean Brownies
This recipe is going to completely psych out your family! Be Brave, give it a try–you will love it! I especially like adding either Peppermint EO or Wild Orange…no kidding…
1 (15 ounce) can black beans, drained, and rinsed
2 large eggs
1/4 cup cocoa powder
2/3 cup honey
1/3 cup coconut oil (or Canola Oil, or whatever baking oil you have on hand)
½ teaspoon baking powder
Pinch of salt
4 drops Peppermint essential oil
¾ cup chocolate chips, divided
Preheat oven to 350F
Put first all ingredients except chocolate chips in to a blender or food processor and blend away. (Ya, this is a very easy recipe!)
Pour batter in a bowl and stir in 1/2 cup chocolate chips.
Pour in a greased 8X8 pan and sprinkle rest of chocolate chips on top (yes, a good job for little hands that might be helping.)
Bake for 30-35min until a toothpick inserted in the middle comes out clean.
Let cool and enjoy! (You need to keep any leftovers in the refrigerator…but, let’s be honest, there won’t be any leftovers…)
*If you have a family like mine that can’t survive off of just an 8X8 pan, you can double the recipe and use a 9X13.
